CA 112 - Menu Planning and Nutrition(3/3) Students plan menus for different types of commercial and institutional food service operations, and study layout and design of the printed menu for a restaurant of his/her choice. Basic nutrition for various age groups is presented. The student writes a low-calorie lunch, reads magazines and newspapers to detect food faddism, and learns to interpret food and food supplement nutrition.
