Description: CA 265 Pastry Centerpieces and Wedding Cakes, a capstone course in the Baking and Pastry Arts Certificate  (156), explores significant artistic decorations in pastry arts. CA 265 emphasizes hands-on production in modern and classical decorating techniques as applied to the mediums of sugar, chocolate, and tiered cakes. Work alongside fellow students and the faculty to master the basics of wedding cake, practical chocolate, and sugar sculpture production for weddings, buffets, and display windows.
