Prerequisites: Prerequisite:   with a grade of “C” or better.  The purchasing practices and controls that help to insure profit for a food service operation are introduced. Exposure and tasting of a variety of foods will increase product knowledge and teach correct product specification. Products include meat, poultry, seafood, dairy, and fresh and canned produce.
