Corequisites: None Description: In CA 224 Bakery/Deli Operations, students learn management and hands-on operational skills in Foodology, our open-to-public quick-service restaurant. Students rotate on stations designed to gain a working knowledge of operating systems necessary to plan, manage, and evaluate quick-service retail operations. Additionally, students receive hands-on training to acquire skills in food and beverage production, labor cost controls, food cost controls, point of sale systems, and inventory management. CA 224 also exposes students to principles of employee training, communication, and resolving interpersonal conflicts. In CA 224, students align marketing, branding, equipment usage and maintenance, and customer service strategies with Foodology’s business goals for improved decision-making.
