College Level Prerequisites: None Description: This course presents, in a step by step format, the best industry practices used in the opening of a new hospitality operation, such as a restaurant, bakery, or similar business. Students will design their own concept and develop it to the point of opening the operation. Topics to be covered are: restaurant development, choosing and managing the development team, preparing a marketable business plan, planning and design, building the restaurant and pre-opening start up.
