Corequisites: None Description: GH 200 offers a comprehensive introduction to the science of human nutrition. This course provides the foundation for understanding the relationships between foods and nutrients to diet, weight control, physical activity, and diseases such as diabetes, high blood pressure, heart disease, and cancer. The major nutrient classes, carbohydrates, fats, protein, vitamins, minerals, and water are studied so their relationships to dietary needs from pregnancy through older adulthood may be understood. Current dietary recommendations and policies including the U.S. Dietary Guidelines, Dietary Reference Intakes (DRI) and Food Labeling are compared and contrasted.
