Prerequisites: A grade of a “C” or better in each of the following courses; CA 135  and CA 136  or permission of the instructor. A hands-on study in the production of two, window display wedding themed cakes.Specific instruction in creating a two-tiered boiled icing and royal icing floral and traditional piped cake, including the following techniques: ruffles, garland,string work, lattice, and scroll designs. Specific instruction in creating a rolled fondant covered 2-tiered wedding cake, with specific instructions on the use of cut outs,drapery, quilting,rolled roses,crimping and bow making.Instruction will be provided in utilizing strategies for planning, ordering, preparing, storing, assembling and safe transportation of wedding cakes
