Corequisites: None Description: CA 104 is designed as an introduction to the principals of professional baking. This course covers the fundamental concepts of yeast dough products, quick breads, laminated dough, simple pastries, pies, tarts, cookies and basic dessert components. Emphasis is on developing understanding through theory and practical preparations during hands-on laboratory activities.
