Description: CA 265 is the capstone course in the Baking and pastry track of the Culinary Arts A.A.A.S. program. It teaches all major aspects of artistic decorations in pastry arts. Students create wedding cakes and practical centerpieces for table and buffet presentations. This includes hands-on study in the modern and classical decorating techniques applied to common mediums of sugar, chocolate, marzipan, gum paste, butter cream, royal icing, and rolled fondant.
