Description: This is a laboratory based course featuring production techniques unique to the fast growing in-store deli/bakery industry. Convenience products, particular to the retail bakeshop environment, are emphasized, in addition to high-end retail scratch products.  Students learn correct display, merchandising and point of sale techniques.  Additionally, students learn about labor cost, food cost, inventory control, loss prevention and equipment cleaning and maintenance.  This course includes a practicum stage experience, research and development, a window display component, field trips, and guest speakers to enhance the student’s understanding of operating a profitable retail bakery.
